Dawn Food Products Inc. announces its launch of a certified gluten-free product line that includes two cake bases, two creme cake bases and cookie base. The company plans to introduce the new products at the 2013 International Baking Industry Exposition (IBIE) October 6 to 9 in Las Vegas, Nevada.

Available in vanilla and chocolate flavors, they exhibit the superior flavor, volume and texture expected from a traditional Dawn creme cake. This product comes in 25- and 50-pound bags with a 12-month shelf life.
Dawn Gluten-Free Cake Bases, available in white and extra-dark devil’s food flavors, make moist cakes with a tight crumb that cut well and decorate easily. The cake bases produce superior taste and is available in 25-pound bags, with a 12-month shelf life.
Dawn Gluten-Free Cookie Base creates a wide variety of gluten-free cookies such as chocolate chip and peanut butter, when sugar, butter, water and inclusions are added in the mixing bowl. These cookies have a chewy texture and rich flavor. Available in a 25-pound bag, the product has a 12-month shelf life and is freeze/thaw stable.
The new U.S. FDA definition of gluten-free requires that a food contain less than 20 parts per million (ppm) of gluten. All three Dawn Foods gluten-free products are certified to be less than 10 ppm. Dawn Foods is also working with the nonprofit National Foundation for Celiac Awareness (NFCA) in preparing foodservice professionals to meet gluten-free needs.
According to Mintel, sales of gluten-free food have grown by 27 percent from 2009 to 2011. While only one percent of the population eats a gluten-free diet after being formally diagnosed with Celiac disease, another five to 10 percent suffer from gluten sensitivity or intolerance. However, according to a March 2013 NPD Group Report, approximately 33 percent of consumers report wanting to cut back or avoid gluten in their diets for the perceived health benefits. As a result, many consumers are searching for great-tasting gluten-free options.
